Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. OBSERVED NO SANITIZER IN THE SANITIZER BUCKET (O PPM) AT THE TIME OF THE INSPECTION. IN ORDER TO BE ABLE TO PROPERLY SANITIZE FOOD CONTACT SURFACES, THE QUAT SANITIZER SHOULD BE AT 200-400 PPM. PIC CORRECTED SANITIZER.

Critical Equipment food-contact surfaces or utensils are unclean. OBSERVED THE INSIDE COVER OF THE ICE MACHINE IS SOILED WITH DUST. IN ORDER TO PREVENT CONTAMINATION, ALL FOOD CONTACT SURFACES SHOULD REMAIN CLEAN TO SIGHT AND TOUCH.

TCS foods not properly thawed. OBSERVED HOT DOGS THAWING IN A SINK FULL OF WATER. IF USING THE SINK TO DETHAW FOOD, IT MUST NOT BE SUBMERGED AND THERE MUST BE A FLOW OF COLD WATER ON THE ITEMS BEING DETHAWED AT ALL TIMES.
