A thermometer capable of accurately measuring the temperature of thin foods was not available. >>> OBSERVED NO THIN PROBE THERMOMETER AT THE ESTABLISHMENT TO TEMP THIN FOODS
To prevent foodborne illness, a food temperature measuring device with a suitable small-diameter probe shall be provided and readily accessible to measure the temperature of thin foods, such as meat patties or fish fillets.
3717-1-04.3(B) / Fixed equipment installation - spacing or sealing.
Fixed equipment did not appear to be properly sealed or spaced for cleaning. >>> OBSERVED A GAP/ SPACE BEHIND THE HAND WASHING SINK LOCATED IN THE KITCHEN
Equipment that is fixed shall be installed so that it is spaced to allow access for cleaning, from adjoining equipment, walls, and ceilings a distance of not more than one thirty-second inch or one millimeter; or sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage; Counter-mounted equipment shall be installed to allow cleaning of the equipment and areas underneath and around the equipment as specified in this rule.

3717-1-05.1(C)(3) / Handwashing sink - installation of self closing, slow closing and metering faucets.
Observed a metering faucet that did not provide an adequate flow of water >>> OBSERVED A HAND WASHING SINK THAT DOES NO STAY ON BY ITSELF IN ORDER FOR FOOD EMPLOYEES TO WASH BOTH HAND CORRECTLY FOR 20 SECONDS OR MORE.
A self-closing, slow-closing, or metering faucet shall provide a flow of water for at least fifteen seconds without the need to reactivate the faucet.
3717-1-06.1(M) / Outer openings - protected.
Observed an outer opening, window, or door without proper protection against the entry of insects and rodents. >>> OBSERVED TWO OPENINGS ONE UNDER THE KITCHEN EXIT DOOR AND ONE BY THE WOMEN'S RESTROOM ALSO THE EXIT DOOR
To prevent contamination, outer openings of an FSO or RFE shall be protected against the entry of insects and rodents as specified in this rule.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. >>> OBSERVED MOPS IN A BUCKET NOT HUNG UP WHEN NOT IN USE
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
