OBSERVED WHOLE PEELED WATERMELON WAS NOT DATE MARKED AFTER OPENING AND PLACED IN COOLER FOR STORAGE FOR MORE THAN 24 HOURS. ALL TCS FOODS SHALL BE DATE MARKED TO INDICATE THE DATE OR DAY BY WHICH FOOD SHALL BE CONSUMED ON THE PREMISES, SOLD OR DISCARDED WHEN COLD HOLDING AT A TEMPERATURE OF FORTY-ONE DEGREES FAHRENFEIT OR LESS FOR A MAXIMUM OF SEVEN DAYS.
