To prevent contamination, the person in charge shall ensure that employees are properly sanitizing cleaned multiuse equipment and utensils before they are reused. SET UP THE THREE COMPARTMENT SINK WITH SOAP, PLAIN WATER, AND SANITIZER SEPARATELY. TEST THE SANITIZER WATER WITH TEST STRIP EACH TIME. AIR DRY UTENSILS AND EQUIPMENT ON A CLEAN SURFACE.
