TO MINIMIZE THE GROWTH OF PATHOGENS THAT MAY LEAD TO FOODBORNE ILLNESS, THE PERSON IN CHARGE SHOULD ENSURE THAT RAW SHELL EGGS BE MAINTAINED AT TEMPERATURES OF 45 DEGREES FAHRENHEIT OR LESS.

TO REDUCE THE PROBABILITY OF CAUSING FOODBORNE ILLNESS BY PATHOGENS OF PUBLIC HEALTH CONCERN, THE PERSON IN CHARGE SHOULD ENSURE THAT CUT TOMATOES, MELONS, AND GREEN LEAFY VEGETABLES BE DATE MARKED FOR NO MORE THAN SEVEN CALENDAR DAYS USING THE DAY THE PRODUCT WAS CUT AS THE DAY OF PRODUCTION OR DAY NUMBER ONE.
