Critical Improper cooling of TCS food. >> Observed corned beef being improperly cooled. >> Correct by cooling cooked TCS food from 135 F to 70 F within 2 hours, and from 70 F to 41 F within 4 hours.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. >> Observed sliced deli meat and salads in reach-in cooler without date marks. >> Correct by date marking all food prepared on site or opened from commerical packaging.
