Critical Repeat Consumer is not properly advised of the risk of consuming raw or undercooked animal foods. OBSERVED THERE TO BE NO ADVISORY ON MENU INFORMING CUSTOMERS THAT CONSUMING RAW OR UNDERCOOKED MEATS, POULTRY, SEAFOOD, SHELLFISH, OR EGGS MAY INCREASE YOUR RISK OF FOODBORNE ILLNESS.

TCS foods not properly thawed. OBSERVED SALMON THAWING IN VACUUM-SEALED PACKAGING. TO PREVENT THE GROWTH OF ANAEROBIC PATHOGENS, FROZEN FISH SHOULD BE REMOVED FROM VACUUM PACKAGING WHILE THAWING.

Non-food contact surfaces of equipment are unclean. OBSERVED GASKETS OF LARGER PREPTOP COOLER TO HAVE DEBRIS BUILDUP.
