Critical Repeat Chlorine sanitizing solution at incorrect temperature and/or concentration. OBSERVED THE CHLORINE SANITIZING SOLUTION IN THE LOW TEMP DISH MACHINE AT 102 DEGREES F. TO PREVENT THE GROWTH THAT MAY CAUSE A FOODBORNE ILLNESS, THE CHLORINE SANITIZING SOLUTION SHALL BE AT LEAST 120 DEGREES F FOR EFFECTIVE SANITIZING.NOTE: THE OPERATION SHALL USE THE THREE COMPARTMENT SINK UNTIL THE DISH MACHINE IS IN GOOD WORKING ORDER.

FOOD ARE RECEIVED FROM APPROVED SOURCES; RESTAURANT DEPOT, VILLAGE MARKET. PEST CONTROL-GENERAL. SANITIZER-CLOROX/BETCO. CHLORINE TEST KIT-YES. FOOD THERMOMETER-YES. PROVIDED THE PERSON IN CHARGE WITH VARIOUS FOOD SAFETY HANDOUTS. THE OPERATOR SHALL OBTAIN A LEVEL II CERTIFICATION WITHIN 30 DAYS.
CRITICAL CONTROL POINT INSPECTION
VI - TCS Food: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. OBSERVED NO DATEMARKING THROUGHOUT THE FACILITY.
IV - Demonstration of Knowledge: The person in charge was unable to demonstrate proper knowledge of food safety and prevention.OBSERVED CRITICAL VIOLATIONS AT TIME OF INSPECTION. THE OPERATION DID NOT HAVE A MANAGER/SUPERVISOR THAT WAS LEVEL II CERTIFIED.
