3717-1-03.2(I)(1) / Storage or display of food in contact with water or ice - packaged foods
Observed packaged foods stored or displayed directly in contact with ice and/or water. OBSERVED PACKAGED FOOD IN REACH-IN FREZER WITH ICE BUILD-UP.
Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water because of the nature of its packaging, wrapping, or container or its positioning in the ice or water.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Repeat Equipment and/or components are not maintained in good working order. PIC VERBALLY INDICATED THAT REACH-IN FREEZER HAS HAD MECHANICAL ISSUES WHICH AS RESULTED IN ICE BUILD-UP. OBSERVED ICE BUILD-UP PRESENT ON PACKAGED FOOD.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. TO ENSURE THAT REACH-IN FREEZER DOES NOT HAVE ICE BUILD-UP THE PIC MUST REPAIR OR REPLACE REACH-IN FREEZER.
3717-1-05.4(N) / Covering receptacles.
Observed waste receptacles that were not covered. OBSERVED OUTDOOR RECEPTACLE AT ENTRANCE WAY THAT WAS FULL AND UNCOVERED.
Receptacles and waste handling units for refuse, recyclables, or returnables shall be: kept covered inside the FSO or RFE if they contain food residue and are not in continuous use, and after they are filled; or with tight-fitting lids or doors if kept outside.
3717-1-05.4(R) / Removal - frequency.
Observed an accumulation of refuse, recyclables, or returnables. OBSERVED OUTSIDE RECEPTACLE THAT WAS OVER FILLED.
Refuse, recyclables, or returnables shall be removed from the premises at a frequency that will minimize the development of objectionable odors and other conditions that attract or harbor insects and rodents.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
The floor and wall junctures are not properly coved or closed, or floor drains were not provided. OBSERVED HANDSINKs IN WOMEN'S RESTROOM AND MEN'S RESTROOM THAT WAS NOT CAULKED/SEALED.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed. TO PREVENT MOLD GROWTH FROM MOISTURE BUILD-UP THE PIC SHALL CAULK/SEAL HANDSINK.
