Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED STRING CHEESE HELD AT 51 DEGREES F IN THE CHEST COOLER. TO PREVENT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, TCS FOODS SHALL BE HELD AT TEMPERATURES BELOW 41 DEGREES F IN COLD HOLDING.

3717-1-02.4(A)(2) / PIC - Level Two Certified Manager
Repeat Facility does not have a person with level two certification in food protection. THE OPERATOR SHALL SUBMIT THEIR SERV SAFE CERTIFICATION TO THE OHIO DEPARTMENT OF HEALTH FOR RECIPROCITY.

Repeat Improper flow of water from a self-closing, slow-closing, or metering faucet. THE WATER FROM THE FAUCET SHALL RUN FOR AT LEAST 15 SECS FOR EFFECTIVE HANDWASHING.

Sink compartments too small to accommodate the largest piece of equipment. OBSERVED A ONE COMPARTMENT SINK FOR WAREWASHING. NOTE: THE OPERATOR USES A THREE BUCKET SET UP FOR WAREWASHING.

Corrected During Inspection Facility not maintained clean. OBSERVED A DUST BUILD UP ON THE CEILING IN THE KITCHEN. OBSERVED MICE DROPPING ON THE FLOOR IN THE KITCHEN AND DRY STORAGE AREA.
