Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. OBSERVED RAW BEEF STORED OVER BAKERY ITEMS IN THE WALK IN COOLER. OBSERVED RAW CHICKEN STORED OVER READY TO EAT ITEMS IN THE TWO DOOR COOLER. IN ORDER TO PREVENT CONTAMINATION, ALL ITEMS SHOULD BE STORED IN COOLERS ACCORDING TO COOKING TEMPERATURE WITH THE HIGHEST COOKING TEMPERATURE FOODS SHOULD BE AT THE BOTTOM. PIC REARRANGED BOTH AREAS AT THE TIME OF THE INSPECTION.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED SHREDDED PORK MADE THE PREVIOUS DAY HOLDING AT 63 DEGREES IN THE COOLER. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL ITEMS COOKED SHOULD BE COOLED IN A TWO STAGE COOLING PROCESS. PIC GIVEN INFORMATION ON THE COOLING PROCESS. PORK WAS DISCARDED AT THE TIME OF THE INSPECTION.

Facility does not have an employee with manager certification in food protection. OBSERVED NO PERSON WITH THEIR OHIO MANAGERS CERTIFICATION IN FOOD PROTECTION.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. OBSERVED TWO MISSING TEMP GAUGES IN THE PASTRY COOLER AND THE DELI MEAT COOLER.

3717-1-03.2(K) / In-use utensils - between-use storage.
Corrected During Inspection In-use utensils improperly stored. OBSERVED IN USE UTENSILS STORED IN 80 DEGREE F WATER NEAR THE HOT HOLDING UNIT. PIC CHANGED WATER SO THE WATER WAS 135 DEGREES F OR ABOVE.

Cutting blocks or boards cannot be effectively cleaned and sanitized. OBSERVED THREE SMALL WHITE CUTTING BOARDS WHICH WERE SCORED AND STAINED AND NO LONGER ABLE TO BE EFFECTIVELY SANITIZED. PLEASE REPLANE OR REPLACE CUTTING BOARDS.

Non-durable equipment observed. OBSERVED THE DELI MEAT DISPLAY COOLER WAS HOLDING AT 44 DEGREES F. ALL ITEMS REMOVED FROM THE COOLER AT THE TIME OF THE INSPECTION AND PIC CALLED TO HAVE THE COOLER REPAIRED.
