Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Properly date mark all tcs prepared foods after twenty four hours held under refrigeration. Many prepared foods are properly date marked in cold storage. CDPH observed two prepared foods which was immediately properly date marked in the walk-in cooler. Note: corrected at the time of inspection.

Comments
In regards to the complaint investigation non-compliant findings at this time of inspection based on inspection and discussion with staff management. Ecolab exterminating invoices presents monthly pest applications. CDPH informed by the owner Ecolab exterminating is scheduled to be providing a application today in the ensuring process of a complete elimination regarding the potential re-occurrence of rodent activity in this Food Service operation.
CDPH in a thorough inspection was unable to observe any previous rodent traps and informed by staff a complete removal of all observed and discussed previous rodent activity which includes observed rodent droppings will be immediately removed today which includes throughout the Food service operation.
Note: CDPH during the inspection informed staff and the owner the approximate one inch diameter wall hole which is located in a concrete wall by the rear entrance door needs to be completely fully sealed to eliminate and prevent potential rodent entry. CDPH observes in inspection and discusses with staff there appears to be no other building foundation openings which could allow potential rodent entry. Staff informs CDPH the maintenance of the observed concrete hole by the rear entrance door will be immediately corrected.
