Critical Food employee(s) are not using proper procedure when washing hands and arms. FOOD EMPLOYEE TURNED OFF THE WATER WITH CLEAN BARE HANDS.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms including surrogate prosthetic devices for hands or arms in a handwashing sink as specified in 3717-1-02.2 (B). DRY HANDS THEN USE THE PAPER TOWEL TO TURN OFF THE WATER TO PREVENT RECONTAMINATION OF CLEAN HANDS.
3717-1-02.4(C)(12) / Person in charge: duties - ensure employees are not contacting food w/ bare hands
Critical The person in charge did not ensure that employees were not contacting ready to eat foods with their bare hands.
To prevent contamination, the person in charge shall ensure that employees are preventing cross-contamination of ready-to-eat food by properly using utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.

Critical Corrected During Inspection Observed improper storage of poisonous or toxic materials. WD-40 IS STORED NEXT TO CLEAN DISHES.
To prevent contamination, poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles by: 1) Separating the poisonous materials by spacing or partitioning; and 2) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, single-service articles or single-use articles. .

Facility did not have one employee with supervisory and management responsibility and the authority to direct and control food preparation and service with level two certification in food protection.

The ventilation system was not being properly cleaned or was creating a public health hazard. OBSERVED GREASE DRIPPING DOWN THE STAINLESS STEEL WALL BEHIND THE COOK LINE.
Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination.
