Corrected During Inspection The cut cabbage was 58F on the line. When Cabbage is cut it is a TCS food item. This must be maintained at 41F and below to prevent bacterial growth. Cut cabbage was discarded.

VII / Protection from Contamination
Corrected During Inspection There was a container of cut cabbage in the walk in refrigerator that was ready to serve and there was a head of cabbage with mold on the leaves in it along with the waste leaves and cores that were soiled from other heads of cabbage laying in the cut cabbage. This allowed for contamination of TCS food that is ready to eat. Items was discarded.
