IN ORDER TO PREVENT CRITICAL VIOLATIONS, THE PIC MUST MAINTAIN MANAGERIAL CONTROL OVER THE FACILITY AT ALL TIMES. PIC CORRECTED CRITICAL VIOLATION.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. OBSERVED NO DATEMARK ON THE RIB TIPS. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL READY TO EAT TCS FOOD MUST BE DATEMARKED AND DISCARDED WITHIN 7 DAYS. PIC DATEMARKED THE RIBS.

Non-food contact surfaces of equipment are unclean. OBSERVED RIB SMOKER WAS SOILED WITH FOOD DEBRIS AND GREASE.

Physical facilities not maintained in good repair. OBSERVED A BURNED OUT BULB UNDER THE MAIN HOOD.
