BASED ON THE FOOD SAFETY RISK INHERENT TO A FOOD SERVICE OPERATION, THE PERSON IN CHARGE MUST EXERCISE MANAGERIAL CONTROL AND DEMONSTRATE FOOD SAFETY KNOWLEDGE BY HAVING NO CRITICAL VIOLATIONS.

OBSERVED CROSS-CONNECTION OF CONDUIT FROM INLET TO FLOOD-RIM LEVEL OF BASIN IN 3-COMPARTMENT UTILITY SINK. BACK SIPHONAGE OF WASTE WATER INTO A POTABLE WATER SYSTEM CAN BE PREVENTED BY HAVING A SUFFICIENT AIR-GAP BETWEEN POTABLE WATER INLET AND WASTE WATER SYSTEM.
VIOLATION WAS CORRECTED DURING THE INSPECTION. PERSON IN CHARGE REMOVED THE CONNECTION.
