BASED ON THE FOOD SAFETY RISK INHERENT TO A FOOD SERVICE OPERATION, THE PERSON IN CHARGE MUST EXERCISE MANAGERIAL CONTROL AND DEMONSTRATE FOOD SAFETY KNOWLEDGE BY HAVING NO CRITICAL VIOLATIONS.

Critical Corrected During Inspection Insufficient air gap between the flood rim and the water supply inlet. OBSERVED CROSS-CONNECTION OF CONDUIT FROM INLET TO FLOOD-RIM LEVEL OF BASIN IN 3-COMPARTMENT UTILITY SINK. BACK SIPHONAGE OF WASTE WATER INTO A POTABLE WATER SYSTEM CAN BE PREVENTED BY HAVING A SUFFICIENT AIR-GAP BETWEEN POTABLE WATER INLET AND WASTE WATER SYSTEM.
VIOLATION WAS CORRECTED DURING THE INSPECTION. PERSON IN CHARGE REMOVED THE CONNECTION.
