OBSERVED FOOD EMPLOYEES FAILING TO DEMONSTRATE KNOWLEDGE OF THE ESTABLISHMENTS PROCEDURES. EMPLOYEE VERBALLY RELATED HE WAS THE DISHWASHER BUT WAS UNAWARE OF HOW TO OPERATE MACHINE OR HOW TO USE THREE COMPARTMENT SINK. PIC VERBALLY INDICATED HE WAS ADDING QUAT TABLETS TO A CHLORINE WAREWASHING MACHINE.
INSPECTOR INSTRUCTED PIC (PERSON IN CHARGE) HOW TO OPERATE THE WAREWASH MACHINE CORRECTLY WITHOUT ADDING QUAT TABLETS TO CHLORINE MACHINE. ALSO INSTRUCTED PIC HOW TO OPERATE THREE COMPARTMENT SINK CORRECTLY.

OBSERVED ALL TCS FOOD BEING HELD HOT ABOVE 135 F, OR BEING HELD COLD BELOW 41 F. PIC VERBALLY RELATED HE UNDERSTOOD DATE-MARKING RULE OF DISCARDING READY-TO-EAT TCS REFRIDGERATED FOOD AFTER 7 DAYS, WITH DAY 1 BEING DATE OF PREPARATION.

OBSERVED FOOD EMPLOYEES MIXING CHEMICALS. EMPLOYEE WAS PUTTING QUAT TABS INTO A WAREWASHING MACHINE USING CHLORINE SANITIZER.
INSPECTOR INFORMED PIC AND FOOD EMPLOYEE THAT MIXING CHEMICALS CAN BE VERY DANGEROUS AND NOT PROPER SANITIZING METHODS FOR SANITIZING FOOD CONTACT SURFACES.
