OBSERVED FISH, CHICKEN WITH ONIONS, AND PORK AND BEAN STEW THAT WERE 120, 108, AND 118 DEGREES RESPECTIVELY. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL HOT HELD TCS FOOD MUST BE KEPT AT 135 DEGREES F OR ABOVE. PIC REHEATED FOOD AND ADJUSED THE TEMP OF THE HOT HOLDING UNIT.

IN ORDER TO PREVENT CONTAMINATION, PLEASE UTILIZE PROFESSIONAL PEST CONTROL AND/OR INSTALL BLUE LIGHTS ABOVE ENTRANCES TO HELP CONTROL THE FLY POPULATION.
