Improper use and/or maintenance of wiping cloths. Observed wiping cloth used for wiping counters and equipment sitting out on the counter. Ensure wiping cloths in use for wiping counters and equipment are held in sanitizer between uses.

3717-1-04.4(B)
Repeat Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed cutting board in back by prep sink with excessive wear not smooth and easily cleanable anymore. Ensure cutting board is replaced or properly resurfaced.

3717-1-04.2(I)
Repeat No sanitizer test kit available.Observed improper sanitizer test strips. PIC says test strips have been ordered. Ensure proper sanitizer test strips are used.

Repeat Cooking equipment or pan surfaces unclean. Observed microwave located on cook line scorched on inside and food debris build-up. Ensure microwave is cleaned to sight and touch and repaired or replaced.

Repeat Floors, walls, and/or ceilings not smooth and easily cleanable. Observed broken tiles around mop sink area. Ensure that tiles are replaced so that floors, walls, and ceilings are smooth and easily cleanable.

Comments
Complaint received regarding potential illness after ordering salad, loaded potato, and half rack of BBQ ribs. Found no food temperatures out of acceptable limits, no improper food storage or dating. Standard inspection was conducted. Observations from previous inspection had not been corrected, but PIC stated pH testing strips had been ordered and microwave will be cleaned.
