3717-1-03.2(C) Critical Observed food that was not properly protected from contamination by separation, packaging. Items like pickles, ribs on speed rack and tub of ice cream require covering when in storage. Ensure items in walk in cooler are covered to protect from possible contamination. To prevent contamination, food shall be protected during storage, preparation, holding, and display. |
3717-1-06.4(B) Observed a build-up debris in corner and under equipment in kitchen area. Ensure that harder to reach areas of the kitchen are being clean at a frequence that doesn't allow for build-up of residue and debris. The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. |

Temperatures taken during inspection within limits of the food code. Operation orderly at this time. Spoke with manager regarding tile grout in kitchen and ensuring separation during preparation of RTE and TCS-cook required items. Inspection and practices reviewed for last two weeks appropriate at this time. |
