Critical Hot water for mechanical sanitization is below required temperature. Observed hot water sanitization temperature was only reaching 166°F. Ensure rinse cycle is reaching 180°F to ensure proper sanitization.

Critical Presence of live insects, rodents, and other pests. Observed one live and 2 dead bugs that appeared to be cockroaches (live located in chemical storage closet, dead located in monitoring trap near bar area and by bar dishwasher). Ensure pests are controlled by eliminating harborage conditions, routinely inspecting shipments of food and supplies, routinely inspecting the premises for the pests, and keeping all doors shut and sealed properly as often as possible, keep facility clean, etc. Please follow corrective actions issued by pest control company.

Comments
Inspection conducted due to potential involvement in a foodborne outbreak investigation and complaint of cockroach spotting in women's rest-room. No pest issues spotted in rest-room, but present elsewhere at the time of inspection-noted in report. Facility has licensed commercial pest control company that applies applications weekly on Thursday evenings. Applications are directed to issue present and confirmed by pest control records shown at the time of inspection. Ensure the corrective actions listed by the pest control company are implemented to minimize the pest issue. Sealing off cracks and repairing gaps in many areas and allowing for effective cleaning should help the harborage possibilities. Also ensure lids are shut on waste bins outside and keeping exterior doors closed as much as possible.

-Recommend getting in touch with ECOLAB or the manufacturer of the warewashing machine to get a new data plate that is readable. Warewashing machines are to be operated in accordance with the machines data plate and other manufacturer's instructions.
-Observed a large clear food pan of pickles at bottom of standing one door cooler, located at end of hot line. Container appeared to have been repetitively reused and refilled, rather than cleaned and sanitized between uses. Ensure the equipment and utensils are kept clean, to minimize any possible contamination.
