Repeat Equipment and utensils are not being air dried. Observed tub and lids that had not been air dried prior to being placed into clean storage.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.
3717-1-04.8(E)
Cleaned equipment and utensils are not properly stored. Observed knives and forks being soaked in sanitizer water over clean dishes on the clean storage rack. Soak these items prior to washing in an approved location. In use chemical sanitizer is not permitted to be held over clean dishes.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.

Wall corner behind the pan holding shelf-near walk-in cooler is not smooth and easily cleanable. Repair/replace corner molding to permit effective cleaning.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.

Complaint received that a recent customer became ill after eat at the restaurant. No deficiencies observed for food items consumed by complainant.Temperatures taken within limits of the food code. Fans in kitchen area need cleaned of debris as not to be a contamination issue for food production.
