3717-1-03.4(F)(1)(a)
Critical TCS foods not being hot held at the proper temperature. Observed bacon that should be either hot held, cold held, or time stamped with a 4 hour time marking at 60 degrees F. Ensure the bacon is time or temperature controlled, rather than sitting out at room temp. No variances have been identified with Texas Roadhouse for maintaining bacon at room temperature. Please check with your headquarters to determine if a variance was filed. As for now bacon can be pre-cooked and then refrigerated before warming back up on the grill. If a variance is filed it can sit out for up to four hours.

Critical Repeat Presence of live insects, rodents, and other pests. Observed one live and 2 dead bugs that appeared to be cockroaches (live located in chemical storage closet, dead located in monitoring trap near bar area and by bar dishwasher). Ensure pests are controlled by eliminating harborage conditions, routinely inspecting shipments of food and supplies, routinely inspecting the premises for the pests, and keeping all doors shut and sealed properly as often as possible, keep facility clean, etc. Please follow corrective actions issued by pest control company.

Repeat Equipment and utensils are not being air dried. Observed containers wet nesting. Ensure that after cleaning and sanitizing, equipment and utensils are allowed to air dry.

Warewashing machine does not contain an accessible, readable data plate. Observed data plate on warewashing machine is no longer readable. Ensure that warewashing machine data plate is replaced. PIC updated that the data plate has been ordered.

Hot water for mechanical sanitization is below required temperature. Observed hot water sanitization temperature was only reaching 166°F. Ensure rinse cycle is reaching 180°F to ensure proper sanitization.
3717-1-03.2(D)/Food storage containers - identified with common name of food.
Working food containers not properly labeled. Observed unlabeled container of breading. Ensure that working containers of food are labeled with the common name of the food.
3717-1-03.2(Y)/Miscellaneous sources of contamination.
Food not protected from contamination. Observed condenser unit fan guards in meat walk-in cooler with dust build-up present. Ensure fan guards are cleaned as needed, so that food is protected from contamination.

[51] Cleaned and sanitized equipment, utensils, laundered linens stored in prohibited area. Observed clean and sanitized bin lids stored on shelf where debris had fallen onto them. Ensure that cleaned and sanitized equipment is stored so that it is not under any sources of contamination.
Comments
Texas Roadhouse continues to treat aggressively for cockroaches with Ecolab. We will be working with both entities to eradicate this issue as quickly as possible. Food from the suspected foodborne illness tested negative for all parameters and no further action is required. Should Texas Roadhouse have a bacon variance approved through headquarters, please provide a copy. Otherwise, a variance may be applied for keeping bacon at room temperature for up to four hours. The State currently does not recognize a study of the water activity of bacon making it an exempt TCS food. Please have your Ecolab representative on-site 4/18 to discuss further treatment procedures for cockroaches.
