Comments
Observed the FSO to be very clean and organized.

Ensure the bulk lettuce or cut leafy green bags are being transported into a food safe container (perforated bags are not acceptable) and proper dated with the day of opening within 24 hours of preparation.

Recommend adding the sanitizer test on the log for the chlorine sanitizer used with the dish machine.

Dish machine shall have a audible or visual alarm to notify user that the sanitizer and detergents are out.

Ensure verification of employee illness training is readily available for all employees present. Person In Charge and ODH certifications shall be available for review.

Observed clean-up kits. Ensure there is a procedure that guides the staff in what to do when a issue may occur within the FSO or in the dining room. Even though the staff will not be cleaning up the issue, they need to know the proper steps to take to ensure exposure is reduced.
