3717-1-03.2(W)(3) / Consumer self-service operations - proper monitoring by employees
Critical Observed a self-service operation (hallway ice bins) that were not properly monitored by knowledgeable food employees at the time of inspection.
To prevent contamination, consumer self-service operations shall be monitored by food employees trained in safe operating procedures. Hallway ice bins shall be properly monitored.

3717-1-03.2(K) / In-use utensils - between-use storage.
Observed an ice scoop that was improperly stored (handle in ice) at the time of inspection.
To prevent contamination, during pauses in food preparation or dispensing, ice scoops shall be stored with their handles above the top of the food within containers. Ice scoops shall be stored in the ice bin with the handle up or another clean protected location.

Regarding Complaint: Observed two ice bins in the hallways that were not being properly monitored and ice scoop handles were coming in contact with the ice.
Per discussion with PIC, the self-service ice will now be monitored and the scoops and bins will be properly warewashed when required.
If ice will continue to be self-service, recommend putting on a training to inform all users on how to safely store ice scoops and prevent contamination to ice.
