[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Observed naked juice cooler to be holding juice at 45 to 50 degrees F at the time of inspection. Repair/adjust/replace cooler to hold TCS beverages at 41 degrees F and above. All Juice that has been observed in cooler shall be discarded (in cooler longer than 4 hours).

Critical Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed the drain from the hold holding steam tables was not provided with a proper air gap.

Critical Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed cold holding display unit (Grab and go) condensation drainage line was directed into a food grade container. Condensation shall be directed to a sanitary sewer and drainage line shall be provided with a proper air gap.

Cold holding display equipment thermometer was located incorrectly or not easily readable in the location at the time of inspection. Temperature measuring device shall be up front and visible.

Overall, the RFE was clean and organized at the time of inspection. Observed proper date marking and bulk storage.

A follow-up inspection has been scheduled for 9/16.

This RFE is now operating as a risk level III due to the assembling of a TCS food (tuna and egg salad sandwiches) and will be increased at the next license renewal.
