3717-1-02.4(C)(11) / PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
Critical Corrected During Inspection PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Observed the dish machine not functioning properly at the time of inspection. The detergent hose was in the chlorine sanitizer concentration container and the santizer hose was in the detergent concentration container. PIC swapped hoses and ran the machine multiple times times to achieve proper concentration/usage.

3717-1-04.4(P) / Warewashing equipment - determining chemical sanitizer concentration.
Sanitizer test kit or other device not being used for the low-temp chemical dish machine.

Recommend adding the sanitizer test on the log for the chlorine sanitizer used with the dish machine.
Dish machine shall have a audible or visual alarm to notify user that the sanitizer and detergents are out.
Consumer is not properly advised of the risk of consuming raw or undercooked animal foods.
Observed the facility to be very clean and well organized.

The violations documented are to be corrected and will be checked during next standard inspection.
