Critical TCS foods not being cold held at the proper temperature. Observed multiple cold TCS food items to be not in or on cold holding. Batter is to be considered TCS until documentation is provide that it is not.

3717-1-03.4(I)(1) / Time as a public health control - written procedures
No written procedures for time as a public health control. An licensor approved procedure is required before Time instead of temperature control for food safety can be used.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Inadequate equipment available for cold holding food. Additional cold holding equipment is needed to hold all cold TCS foods at acceptable temperatures.

Inspection completed during the Kent Heritage Festival 2023.

TCS foods are required to be cold held at 41 degrees F or below. Additional cold holding is required to ensure this is accomplished. Time instead of temperature procedure is required for any TCS food item that is not cold or hot held for food safety. A procedure is required to be created and submitted to licensor (KCHD). Once approved, the procedure may be used.

Batter is to be considered TCS until proof the mixed batter is shelf stable. Provide documentation, additional cold holding, or time instead of temperature procedure.

Notes:1) Proper hair coverings is to be warn by all employees working in the food preparation area. 2) Only a plain banded ring may warn by food handlers. 3) Fake or painted finger nails are allowed if proper glove use is completed.
