| Complaint on 16-Dec-2021 : Regarding complaint: Complaint received by Health Commissioner regarding the FSO is selling and using expired foods and food are present with expired dates. Observed multiple foods stored in the walk-in coolers missing date marks and/or dates that have expired. Observed dry stock room was in the process of being reorganized. Recommend installing casters on all the can good storage racks. Removed distressed or expired foods and designate a location for proper storage. Ensure all staff is aware of the procedure to handle distressed or expired foods. Recommend posting procedure in all food storage locations. Recommend developing a date marking procedure and train all staff. TCS food shall never exceed 7 days once opened from original packaging or prepared. All foods must be provided with a date mark and common name label (7 days or original packaged labeled). Frozen repackaged foods require dates of the original package expiration and opening date. Additional staff has been provided to help with food storage services and will be reasonable for FIFO procedures. Ensure all new staff have received adequate training before unsupervised work is allowed. A follow-up inspection is required to ensure the date marking issues have been corrected. |
