3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean (deli slicer). The PIC immediately cleaned the deli slicer when the violation was identified.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked (ham, shrimp, potatoes, rice, ribs, chicken). Education was provided to improve date marking procedures.

3717-1-07.1(C) / Poisonous or toxic materials: Conditions of use.
Critical Repeat Corrected During Inspection Improper use of a poisonous or toxic substance. An unapproved pesticide device was at the bar to combat drain flies. Education was provided about proper pest control and the PIC immediately discarded the item.

3717-1-03.2(G) / Washing fruits and vegetables.
Repeat Raw fruit and/or vegetables not washed in the proper sink. The kitchen is not equipped with a proper food preparation sink to wash produce. The 3-compartment sink is currently used with a strainer until the proper sink can be installed.

3717-1-04.8(E)(1) / Single-service and single-use articles - storage
Repeat Single use items are being re-used as food storage containers (sour cream and cottage cheese).

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment not approved by a recognized testing agency. Multiple pieces of non-commercial equipment (freezers, microwave, toaster, blender).

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean (cold holding equipment, exhaust hoods, cooking equipment, storage racks and shelving).

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. There are multiple areas throughout the building in need of repair (floors, walls, ceiling, cabinets, etc.). The surfaces are damaged and no longer smooth, durable, and easily cleanable.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Unnecessary items scattered throughout the building creating clutter that does not promote proper cleaning.
