3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Observed refrigerated, ready-to-eat, TCS (deli sandwiches and burritos) foods held refrigerated for more than 24 hours were not properly date marked at the time of inspection.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one. Provide a 7 day discard date on all TCS deli foods. Provide proper documentation from the manufacturer if these foods are to be cold held for longer then 7 days. Correct By: 29-Oct-2014

Critical Corrected During Inspection Ready-to-eat, TCS food (deli sandwiches, burritos, etc.) that had been date marked was not properly discarded when required.
To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) and (G)(2) of this rule, except the time the food is frozen; (b) is in a container or package that does not bear a date or day; or (c) is marked with a date or day that exceeds the time and temperature combination specified in (G)(1) and (G)(2) of this rule. Critical Observed the plumbing system located at the 3 compartment sink was not properly repaired at the time of inspection.
A plumbing system shall be repaired according to the Ohio building code. Repair the faucet fixture on the 3 compartment sink to allow for proper ware washing of utensils and equipment. Correct By: 29-Oct-2014

Observed bulk food display (donuts) for customer self-service was not properly labeled at the time to inspection.
Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: (a) the manufacturer's or processor's label that was provided with the food, or (b) a card, sign, or other method that includes the information specified under (C)(2) of this rule. Observed unnecessary or nonfunctional items and /or litter on the premises in the back room at the time of inspection
The premises shall be free of items that are unnecessary to the operation or maintenance of the FSO or RFE such as equipment that is nonfunctional or no longer used and litter. Organize the back room by using selves and dunnage racks. All equipment that is not needed shall be removed from the RFE premises. Correct By: 29-Oct-2014
