Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed multiple TCS foods without proper date marking. All foods were prepared at another location before the event. Label and date mark all foods per the food code before transferring to the MFSO.

Inspection was complete at the KSU Community Food Truck Series. All foods shall be date marked and properly labeled according to the food code at the commissary/processing location. Observed proper hand washing is available. Ensure staff is properly washing hands before donning gloves and between breaking tasks. Observed hot and cold foods were holding at acceptable temperatures. PIC was able answer all questions correctly and demonstrated knowledge regarding food safety. MFSO was very clean and organized. Beards shall be proper covered with beard snoods (longer than eyebrow length). |
