Corrected During Inspection At the time of inspection, observed a container of RTE, TCS food with an expired date mark.
Refrigeration slows, but does not stop the growth of harmful organisms. Over time, these organisms may increase their risk to public health. To prevent illness refrigerated, ready-to-eat TCS food that has been date marked in the facility should be discarded when the day or date exceeds the date marked on the food. Operator discarded the food at the time of inspection.

Comments
Operation maintains a written illness policy which food employees must understand and sign. PIC is aware of signs and symptoms associated with reportable illnesses, and maintains an employee illness log.
Observed proper handwashing and glove use by food employees at the time of inspection. There is a designated area where employees may eat food or drink beverages.
PIC demonstrated excellent knowledge in food safety.
All RTE, TCS foods stored under refrigeration were appropriately date marked.
Operation has reduced the quantities of prepared foods at meal times, and is now cooling smaller amounts of food that require refrigerated storage. An ice wand is used to rapidly cool RTE, TCS foods for storage. Ensure that ice wands are stored in a manner that protects them against contamination.
Some prepared foods are transported in cambro containers for service in a satellite kitchen in a different area of the building.
Juices, eggs, and egg mixes used in the facility are received pasteurized.
