Repeat Observed a build-up of dirt and debris on the floor of the walk-in cold holding unit at the time of inspection.
To prevent health hazards, the physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. The floor of the walk-in cold holding unit shall be cleaned and maintained.

To prevent health hazards, the physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. The floor behind the front service counter shall be cleaned and maintained.
3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Observed unnecessary or nonfunctional items on the premises. Observed old cooking equipment and hot holding equipment in back room. Observed many unnecessary items in the back room at the time of inspection.
The premises shall be free of Items that are unnecessary to the operation or maintenance of the FSO such as equipment that is nonfunctional or no longer used and litter. Remove all items that are no longer need in the daily operation. Organize the back room to prevent pest harborage. Recommend installing a wall to separate the "back storage room" and the front retail area.

Corrected During Inspection Observed litter on the outside premises around the waste receptacle at the time of inspection.
To prevent health hazards, the premises shall be free of litter. Litter shall be held in a waste receptacle at all times.

The equipment in the back room is currently not in use. Per discussion with manager, the health department will be contacted when the FSO expands the operation.
Observed hand washing sinks properly supplied and accessible at the time of inspection.
Tongs used for the donuts, coffee urns, and ice scoop shall be washed, rinsed and sanitized every 24 hours.
