3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Observed handwashing sink being used for purposes other than handwashing (rinsing fruit) at the time of inspection.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing. Discontinue using handwashing sink for anything but hand washing.
3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Repeat Observed a direct connection between the sewage system and a drain originating from equipment (sink for washing/preparing foods) in which food, portable equipment, or utensils are placed at the time of inspection. Facility was not provided with a properly installed sink for preparing ready to eat foods (vegetables and fruits).
To prevent contamination to foods, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed unless allowed by the Ohio building code. If foods are to be washed and prepared at this location, then a designated food preparation sink with a indirectly connected drain shall be provided. Until this sink has been provided, all foods that are required to be washed shall be washed at the Stanton Middle School wrapped and then delivered ready to eat. Provide documentation that this process has changed.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed a component of the hot holding unit that were not maintained in good working order (corner of unit with duct tape) at the time of inspection.
To allow for easy cleaning, equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Repair the corner of the hot hold unit to be smooth and easily cleanable.

Overall the facility appeared very clean and well maintained.
For proper food defense, the FSO shall be locked if the operation is not being supervised by an employee.
A handout was given to the PIC regarding packaged foods that are monitored by food employees.
All violations documented on this report will checked for proper corrective action during the next standard inspection.
