[?] A summary of the violations found during the inspection are listed below.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Observed the concentration of a chlorine sanitizing solution for the mechanical warewashing equipment did not meet the minimum requirements specified in the code at the time of inspection. PIC stated they will call to get it repaired and will use the three-compartment sink unitl its repaired.

3717-1-07.1(B) / Poisonous or toxic materials: Restriction.
Unnecessary chemicals stored on premises. Observed raid aerosol cans on the floor near the back door and next to the chemical warewashing machine. Operation has a service with a licensed pest control operator and chemicals are not used. PIC stated they will be removed.

3717-1-03.2(K) / In-use utensils - between-use storage.
Observed In-use utensils improperly stored at the time of inspection. Multiple bowls and single-use containers were being stored in the food products (cooked rice, spices, etc.)

3717-1-04.4(B) / Cutting surfaces.
Repeat Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed the bottom cutting board at the prep table damaged. PIC stated the cutting board is not used for cutting only to add height to the cutting board that is used on it. equipment shall be smooth and easily cleanable and shall be replaced with something that can be warewashed properly.

3717-1-04.4(P) / Warewashing equipment - determining chemical sanitizer concentration.
Sanitizer test kit or other device not being used.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed an accumulation of soil residues on the gaskets and handles of the cold holding and freezer equipment throughout the facility.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Observed floors along the baseboards and under equipment throughout the facility not maintained clean.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed damaged or missing flooring throughout the facility.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Light intensity less than fifty foot candles in required areas. Observed measured light intensity of 30 foot candles where employees work with knives and slicers at the time of inspection.

Latex gloves shall not be used within the facility. Ensure large garden-like gloves used for cleaning are not latex.
A follow-up inspection was scheduled for Friday to follow-up on the chemical warewashing machine.
The remaining violations shall be corrected and will be checked during the next inspection.

VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below.
VI - P - TCS Food: Observed ready to eat TCS foods being properly date marked, and discarded when required.
III - P - Preventing Contamination by Hands: Food employees were not contacting exposed ready-to-eat foods with bare hands.
II - P - Good Hygienic Practices: Food employees were eating, drinking or using tobacco in designated area.
II - P - Good Hygienic Practices: Food employee working with exposed foods, clean equipment, utensils, linens or unwrapped single-service or single use articles was not experiencing discharge from eyes, nose, or mouth.
