3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed container of blue cheese without a date mark. PIC stated the blue cheese was opened yesterday. PIC will discuss date marking with employees.

3717-1-03 / Food - safe, unadulterated, and honestly presented
Food was unsafe, adulterated, or not honestly presented. Observed food product in a dented can stored on shelving near the warewashing. Damaged products shall be stored in a desginated location and labeled damaged.

Food was unsafe, adulterated, or not honestly presented. Observed bags of diced ham and chicken in the freezer near the handwashing sink with a large amount of ice crystal. Products are past the dates that are on the bags.

Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Repeat Low pressure for hot water supply at the handwashing sink in the warewashing area.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Floors floor drain under the tilt kettles at the far end of the kitchen not maintained clean. Employee began cleaning the area.

Ensure employees are not eating while working. Discussed employee break areas.
If water filter are used for water supply lines they shall be maintained and serviced as stated by the manufacturer, documentation shall be readily available.
Employee stated it is difficult to clean the drain/area under the tilt kettles.

The violations documented shall be corrected and will be checked during next standard inspection.
