Comments
This inspection was conducted in response to a Plan Review request due to the RFE being under new ownership. Currently, the RFE is NOT a licensed RFE. In order for the location to licensed and to prevent enforcement action, provide/correct items documented on this report ASAP. The following issues were observed and in need of corrections before a RFE application will be provided:

1) A designated hand washing sink is required in the back ware washing room.
2) Provide a proper "splash" guard to the right of the front hand washing sink to prevent splashing on to delivery hot bags.
3) Drainage pipes from front hand washing sink need to up off the floor (6 inches) to allow for proper cleaning of the floors. RFE has a history of pest infestations.
4) Remove old caulk from wall and front hand sink juncture and rechaulk with mold resistant.
5) Caulk all holes in FRP or replace damage FRP through out the RFE.
6) Repair or replace damage Coved base molding under the 3 compartment sink.
7) Provide a proper splash guard on the right side of mop sink to protect splash contamination to clean items on drying racks at 3 compartment sink.
8) Back room and storage areas have not been provided with a proper Coved base finish. Provide a proper coved base finish through out the facility. Recommend sealing the spaces with caulk to limit food traps and pest migration.
9) Repair/replace the walk-in cooler door/seal. There is about a inch gap. Cooler seems to be holding temperature.
10) Seal the gaps between the wall of the RFE and the outside walls of the walk-in cooler. These spaces need to sealed to limit pest migration and food traps.
11) Repair and seal the damage drywall behind the dirty dough trays. Recommend installing FRP or similar material due to this wall being easily damaged for trays.
12) Clean up the large amount of litter/trash around the outdoor refuse storage containers and parking lot.
13) Repair the base board tile in the employee restroom.
14) Repair or replace the drop ceiling tiles. Tiles shall be installed without any gaps or openings to limit pest migrations and to avoid Fire Code violations.
15) Repair the condensation drainage line so condensate does not leak inside the walk-in. The drainage line shall not be installed on the floor and shall be provided with a proper air gap.
16) Clean and seal the gaps between the dough make tables and the table and walk junctures to prevent food traps. (this includes the triangle shelf). Recommend cleaning behind the dough table in the space that covers the window sill. This should be covered.
17) Clean floors around the safe and caulk around floor and safe wall junctures.
18) Caulk in all holes in the FRP behind the pizza make line.
19) Provide proper light shield on lighting over the pizza make line. Shield is missing.
20) Provide 20 foot candles of lighting at the hand washing sink in the employee restroom.
