Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed containers of raw ground beef stored above raw pork in he walk-in cold holding unit. PIC had employees stored the items properly and ensured that the pork will be cooked to the proper temperature.

Critical Observed no approved backflow prevention device on the plumbing system for the coffee brewing equipment, ice tea dispensing equipment, and ice machine. Nonfood-contact surfaces constructed of unapproved materials. Observed chipping and unfinished wood shelf above the salad prep cold holding unit.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed damaged handle for the small reach-in freezer in the hallway with the back exit door.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed door seals for reach-in cold holding units and reach-in freezer with an accumulation of food residue. Observed fan cover in the walk-in cold holding unit with an accumulation of dust and other debris. Observed shelving units in the dish area and walk-in freezer in poor condition and an accumulation of food residue and other debris.

Corrected During Inspection Improperly cleaned storage area for refuse, recyclables, or returnables. Observed trash scattered around the dumpster and lids were open. Employee cleaned up the litter at the time of inspection.

Observed walls throughout the facility in disrepair and no longer smooth and easily cleanable. Per discussion with owner, walls are going to be repaired and painted in the near future.

Light intensity less than ten foot candles in required areas. Observed light meter reading of 3 foot candles in the walk-in cold holding unit.

Light intensity less than twenty foot candles in required areas. Observed light meter reading of 3 foot candles at the hand sink and reach-in cold holding unit in the server station area. Observed light meter reading of 2 foot candles at the hand sink and reach-in cold holding unit behind the bar.
