3717-1-02.4(C)(16) / Person in charge: duties - ensure the facility has written procedures for vomiting and diarrheal events.
Observed person-in-charge did not ensure that the facility has written procedures for employees to follow when responding to vomiting or diarrheal events at the time of inspection.
To prevent health hazards, person in charge shall ensure that the FSO or RFE have written procedures for employees to follow when responding to vomiting or diarrheal events that involved discharge onto surfaces. Provide a clean-up procedure and ensure the appropriate supplies are within the facility.
3717-1-03.2(K) / In-use utensils - between-use storage.
Corrected During Inspection Observed in-use scoop improperly stored in the bulk rice container (handle in product) at the time of inspection.
To prevent health hazards, discontinue storing rice scoop with the handle in the product. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: 2) In food that is not TCS with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon;
3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed accumulation of soil residue on nonfood-contact surfaces of the shelving above the warewashing sinks (3-compartment) at the time of inspection..
To prevent health hazards, nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Clean and maintain the shelving above the warewashing sink (air drying shelf).
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris on the floors in the walk-in freezer at the time of inspection.
To prevent health hazards, the physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean and maintain the floors in the walk-in freezer.
