Critical Corrected During Inspection Observed open bag of steak in the prep refrigeration unit without a date mark. PIC stated they have a carry-over prep process that they follow and the bag should be fully emptied into a container and used within the day. Ensure employees are following the procedure and date marking open bags of TCS foods. PIC stated steak was opened yesterday.

Critical Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed no air gap on the walk-in condensation drainage line.

Contact the supplier to ensure mushrooms are washed and a ready-to-eat product, maintain documentation at the facility. Mushrooms are not indicated on the packaging that they are washed and shall be washed in the food prep sink prior to using/cooking. The violations documented shall be corrected and will be checked during next standard inspection. |
