3717-1-03.4(I)(2) / Time as a public health control - four hour time limit
Critical Corrected During Inspection Improper use of time as a public health control (4 hours). Observed no time marks on the products held at room temperature. Observed products with 7 day date marks but not time marked for 4 hours. PIC corrected the violation and spoke with employee regarding the time stamps.

3717-1-06.4(K) / Controlling pests.
Critical Observed flying insects (fruit flies) around the specialty drink area, specifically near the orange juice equipment.

3717-1-04.4(J) / Mechanical warewashing equipment - wash solution temperature.
Critical Improper temperature of wash solution in mechanical warewasher. Observed temperature device on wall stating low wash temperature and add detergent. PIC added detergent and stated the wash cycle needs to be ran a few times. Temperature was unable to reach 120 degrees F. Discontinue using the machine until the wash temperature is reading above 120 degrees F.

Handwashing signs not posted at the hand sinks in the kitchen.

Repeat Food employees wearing jewelry on arms or hands (watch) during food preparation.

Repeat Ice build-up throughout the walk-in freezer. Products shall not be stored under leaking condensation lines.

Non-food contact surfaces not cleaned at the required frequency. Observed accumulation of food residue and debris on the specialty drink equipment and the drink area (orange juice equipment) Observed gaskets for multiple cold holding/feezer equipment not maintained clean.

Plumbing system not properly maintained or repaired. Observed leak from the handle at the hand washing sink near the ice machine.

A recent complaint was received from iwaspoisoned.com.
Per complainant: Report date: October 23, 2021, 10:31:05 AM. Symptoms: Nausea, Vomiting. I ate breakfast and shortly after threw up
Complaint findings: No issues were observed regarding the complaint. Discussed food sources, employee health, employee hygiene, and good food safety practices with the person-in-charge at the time of inspection. No reports from the FSO have been received at this time.
Complaint is now considered closed.

The violations documented shall be corrected and will be checked during next standard inspection.
II - P - Good Hygienic Practices: Food employee working with exposed foods, clean equipment, utensils, linens or unwrapped single-service or single use articles was not experiencing discharge from eyes, nose, or mouth.
