No written procedures for time as a public health control for the omelet station and the grill station. Observed TCS products items being held cold with ice in the cook areas without proper procedures. Per discussion with PIC, these products are only used for breakfast from 9-12.

3717-1-02.2(G) / Jewelry - prohibition.
Food employees wearing jewelry on arms or hands during food preparation.

3717-1-04.8(G)(3) / Kitchenware and tableware - furnishing single-service articles.
Single service articles intended for food contact improperly dispensed. Observed deli wrap papernext to the hand sink on the cook line exposed to splash.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed stained ceiling or accumulation of grease or debris on the ceiling above the pizza equipment at the pizza station.

Comments
Ensure cutting surfaces that are contacted with tcs foods are being warewashed every 4 hours.
Recommend providing a small cutting board that can be easily removed to be warewashed at the required frequency.
PIC demonstrated excellent knowledge in regards to food safety in the facility.

The violations documented are to be corrected and will be checked during next inspection.
Food Process Reviewed: Time instead of temperature for public health control procedure (4-hour hold) for the pizza operation.
