3717-1-03.4(E) / Cooling methods - temperature and time control.
Repeat Corrected During Inspection Observed improper method for cooling TCS foods at the time of inspection. Container with TCS food was stacked closely together.
Correction: To prevent the growth of pathogens: When placed in cooling or cold holding equipment, food containers in which food is cooling must be arranged so as to provide maximum heat transfer through the container walls and; loosely covered, or uncovered if protected from overhead contamination. The person-in-charge moved the containers of cooked TCS food to the walk-in cooler so that they were not closely stacked and cold air could circulate more freely.
3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Observed nonfood-contact surfaces that are not designed and constructed to allow easy cleaning or maintenance at the time of inspection.
To prevent health hazards, an easily cleanable surface shall cover the shelves that contain wood in the facility. Nonfood-contact surfaces shall be designed and constructed to allow easy cleaning and to facilitate maintenance.
3717-1-04.1(Y) / Temperature measuring devices.
Observed cold holding equipment in the basement and next to the ovens that did not contain a thermometer at the time of inspection.
To monitor equipment temperatures, an ambient thermometer shall be placed in the cold holding unit in the basement and next to the ovens. Properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit.
3717-1-04.4(Q) / Utensils, temperature and pressure measuring devices - good repair and calibration.
Observed food thermometers that were not kept in good repair or calibration at the time of inspection.
To prevent health hazards, food temperature measuring devices shall be calibrated as necessary to ensure their accuracy or shall be maintained in good repair and be accurate within the intended range of use.
3717-1-05.4(H) / Toilet room receptacle - covered.
Observed no covered receptacle in women's restroom at the time of inspection.
To prevent health hazards, a toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
3717-1-06.2(E) / Handwashing signage.
Repeat Observed no handwashing sign posted at handwashing sink used by employees in the mens restroom at the time of inspection..
To encourage proper hand washing, a sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.

Be careful when placing items into walk in cold holding unit that an excessive amount of food is not placed into the same area. Large amounts of food placed closely together may not allow food to cool quickly enough, and could create a "hot spot" in the refrigerated unit that warms other TCS foods to an unsafe temperature.
