Critical Observed refrigerated, ready-to-eat, TCS (deli sandwiches and burritos) foods held refrigerated for more than 24 hours were not properly date marked at the time of inspection. All foods were provided with date marks.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one. Provide a 7 day discard date on all TCS deli foods. Provide proper documentation from the manufacturer if these foods may be cold held for longer then 7 days. Provide the data that shows the TCS food item is safe after 7 days. Correct By: 13-Nov-2014
3717-1-05.1(S)(1) / Plumbing system - maintained in good repair.
Critical Observed the plumbing system located at the 3 compartment sink was not properly repaired at the time of inspection. Observed the drainage pipes to be leaking at the time of inspection.
A plumbing system shall be repaired according to the Ohio building code. Repair the drainage pipe on the 3 compartment sink. Correct By: 13-Nov-2014
3717-1-07.1(E) / Sanitizers - criteria.
Critical Observed the use of a chemical sanitizer that is not approved for use on food contact surfaces at the time of inspection.
To prevent health hazards, chemical sanitizers and other chemical antimicrobials applied to food-contact surfaces shall meet the requirements specified in 40 CFR 180.940. Provide proper chlorine sanitizer (un-scented) that meets this rule. Correct By: 13-Nov-2014
