3717-1-02.4(C)(11) / PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
Critical Repeat PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Dish machine was not dispensing chlorine at time of inspection and the PIC was unaware of the problem. Education was provided to improve ware washing procedures.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Repeat Chlorine sanitizing solution at incorrect concentration. The dish machine was not dispensing chlorine at time of inspection. Education was provided to improve dish machine operations. Maintenance was contacted to make repairs. The staff was instructed to use the 3-compartment sink until the dish machine could be repaired. Also, all utensils were to be ware washed.

Complaint on 10-Apr-2023 :

An inspection was conducted in response to a customer complaint. The customer was concerned about food safety during a recent visit to the FSO. The following items were reviewed at time of inspection in response to the complaint:

1. Hair Restraint - The customer was concerned about the lack of proper hair restraint for kitchen staff. The violation was observed, documented, and discussed with PIC.
2. Cleaning - The floors were not clean in the kitchen under equipment. The violation was observed, documented, and discussed with the PIC.
3. Dish Machine - The dish machine was not working properly at time of inspection. The violation was observed, documented, and discussed with the PIC.
4. Returned Food - The PIC was knowledgeable regarding proper procedures for customer returned food.

Education was provided to improve food safety procedures and a plan of action was reviewed to correct issues. A re-inspection scheduled for 4/14/23 to confirm that violations have been corrected.
