3717-1-02.4(C)(14) / PIC: duties - ensure employees are properly trained in food safety, including food allergy awareness.
Critical Corrected During Inspection Person in charge did not ensure their employees are properly trained in food safety. Observed a high number of date marking violations which indicates that the staff is not properly trained on date marking procedures. Education was provided to improve food safety.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Repeat Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Multiple foods were stored in the cold holding units beyond their proper discard dates (feta discard date of 3/21, meatballs discard date 3/23, sausage discard date 4/1, chicken discard date 3/28). The PIC immediately and voluntarily discarded the items once the violation was identified.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked (spinach, tomatoes, ham, meatballs, chicken, feta, sausage). The PIC immediately and voluntarily discarded the items once the violation was identified.
