[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(B)(2)(i) / PIC: Demonstration of Knowledge - Identifying major food allergens
Critical PIC unable to demonstrate knowledge of major food allergens. Person in charge was unable to retain the label for the donuts. PIC stated they will contact the supplier to get labels for all the donuts that are received.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed container of milk on the countertop near the drive thru window measured above 41 degrees F. PIC voluntarily discarded product. Discussed a 4-hour hold time, a written procedure would need to be developed, approved, and implemented. License would also increase to a risk level 4 licenses. Discontinue holding TCS products out of refrigeration units.

3717-1-02.2(G) / Jewelry - prohibition.
Food employees wearing jewelry on arms or hands during food preparation.

3717-1-03.2(K) / In-use utensils - between-use storage.
In-use utensils improperly stored. Observed soiled water in cups at the in-use utensils stations throughout the facility. Discontinue dipping utensils in soiled water cups. PIC the container and utensils are cleaned and sanitized at least every 4 hours.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed non-food contact surfaces of the bulk sugar container at the three-compartment sink not maintained clean. Ensure scoops are being stored with the handle up. Observed handwahsing sink area near the drive thru not maintained clean. Ensure sink is only used for handwashing and not as a dump sink.

Proper handwashing shall occur prior to starting work, donning gloves, after breaking task and then returning, and any other times hands are contaminated such as using cell phones.
Ensure opened TCS products are being date marked if not used within 24 hours.
Ensure chemicals are being stored in a designated location away from food prep and clean equipment.

The violations documented shall be corrected and will be checked during next standard inspection.
