[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(16) / PIC: duties - ensure written procedures and plans are maintained and implemented in the facility.
Critical Observed the limitations on the facility which are found on the back of the license not being followed. Observed produce not received ready-to-eat (tomatoes, micro greens, onions, etc.) and employees are washing them in three-compartment sink prior to use. Lack of cold holding capacity requires daily deliveries from processing facility (KSU Catering Kitchen at Student Center/KSU Commissary Kitchen 2nd floor Tri-Towers). All foods are required to date marked at the processing location. Observed facility unable to lock up safely at the end of the night. Facility shall install cabinets that can be locked and ensure the secure is secure when not operating.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Observed flatbread oil mixture being held at room temperature above the tabletop prep refrigeration unit. PIC states they pull this product out when they are busy for ease of use. Provide documentation that product is non-tcs in order to keep it out of refrigeration.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Ready-to-eat, TCS food not properly discarded when required. Observed two opened containers of micro greens (arugula) without a date or date was past 7 day date mark. Unable to determine whether procut is washed and ready-to-eat. Per limitations, facility has no means to wash produce. PIC (student manager) will get in touch with KSU full time manager to discuss voluntary discard and product going forward.

3717-1-02.3(C) / Hair restraints - effectiveness.
Food employees not wearing a hair restraint. Multiple employees were observed with hair outside the hair restraint (pony tails) while working with exposed food.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed single-use items (soup containers, cups, etc.) under the service line removed from the original package.

3717-1-05.4(O) / Using drain plugs.
No drain plugs in waste receptacles.

3701-21-25(K) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection.

Comments
Per discussion with PIC milk/creamer for coffee is kept in the fridge and then passed to the customer to self-serve. Recommend keeping the insulated container out for customer self-service and ensuring the product stays below 41 degrees F.
The warming unit shall not be used to cook soups unless documentation is provided stating it is safe to use for cooking and warming.
Ensure proper hand washing is occurring when needed and glove use is occurring after using oven mitts.

The violations documented are to be corrected and will be checked during the follow-up inspection (2/22/24).
