Bulk food for customer self-service not properly labeled. No manufacturer's or processor's label or card,sign, or other method of notification with the required information was provided in plain view of the consumer for the baked goods and the soup.

Comments
Observed the facility well organized and maintained. The PIC demonstrated excellent knowledge regarding food safety in the facility.
Observed acceptable temperature logs and employees properly taking temperatures of TCS foods.

If time instead of temperature for public health control is going to be used a written procedure needs to be developed implemented.
If the facility is going to use a 4-hour hold procedure, the license will need to increase to a risk level 4 for next licensing year.

The violation documented shall be corrected and will be checked during next standard inspection.
